Preparation

  • Preheat your oven to 350°F (175°C).
  • In a mixing bowl, combine the rolled oats, all-purpose flour, and brown sugar. Stir until evenly mixed.
  • Pour in the melted unsalted butter and vanilla extract into the dry mixture. Blend until it forms a crumbly dough.
  • Firmly press about two-thirds of the oat mixture into the bottom of a baking dish.
  • In a separate bowl, mix the sliced strawberries with sugar and lemon juice.
  • Spread the strawberry mixture evenly over the pressed oat base.
  • Crumble the remaining oat mixture evenly over the top of the strawberries.
  • Bake in the preheated oven until the top is golden brown and the strawberries are bubbling, about 25-30 minutes.
  • Allow the bars to cool in the dish before cutting into squares.

Notes

Store leftovers in an airtight container to maintain freshness. They can last at room temperature for up to 2 days, in the fridge for about a week, or frozen for up to 3 months.
