Instructions
 

Preparation

  • Preheat your oven to 350°F.
  • In a medium mixing bowl, combine the flour, oats, sugars, baking powder, salt, and cinnamon.
  • Add the cold, diced butter to the dry mixture and work it into the dry ingredients until the mixture resembles coarse crumbs.
  • Reserve about half of the crumb mixture, and press the rest into an even layer in the bottom of a greased 9×9-inch baking dish.

Filling

  • In a separate bowl, mix together the strawberries, granulated sugar, brown sugar, lemon juice, lemon zest, strawberry jam, and cornstarch until combined.
  • Spread the strawberry mixture evenly over the crust in the baking dish.

Assembly and Baking

  • Sprinkle the reserved crumb mixture evenly over the top of the strawberry filling.
  • Bake in the preheated oven until the top is golden brown and the filling is bubbly, about 35-40 minutes.
  • Once baked, let the bars cool in the dish on a wire rack before slicing.
