Preparation

  • In a mixing bowl, combine almond flour, erythritol, baking powder, and salt.

  • Beat in the egg into the coconut oil and vanilla mixture until fully combined.
  • Gradually add the dry mixture to the wet ingredients and stir gently until combined.
  • Line a baking sheet with parchment paper.
  • Drop rounded tablespoons of dough onto the baking sheet, spaced about two inches apart.

Baking
