Ingredients

Dry Ingredients

  • 1 cup almond flour adds a nutty flavor and moisture
  • 1/2 cup unsweetened cocoa powder provides rich chocolate flavor
  • 1/4 cup sugar substitute like erythritol or stevia; sweetness without calories
  • 1/2 teaspoon baking soda helps cookies rise
  • 1/4 teaspoon salt balances sweetness

Wet Ingredients

  • 1/4 cup unsalted butter, melted adds moisture and richness
  • 1 large egg binds ingredients together
  • 1 teaspoon vanilla extract enhances flavor
  • 1/2 cup sugar-free chocolate chips adds sweetness and texture

Instructions

Preparation

  • In a mixing bowl, combine the almond flour, unsweetened cocoa powder, sugar substitute, baking soda, and salt. Mix thoroughly.
  • Melt the unsalted butter in a bowl and allow it to cool slightly.
  • Add the egg and vanilla extract to the melted butter and whisk until smooth.
  • Gradually mix the wet ingredients into the dry ingredients, stirring gently until just combined.
  • Fold in the sugar-free chocolate chips until evenly distributed.

Baking

  • Preheat your oven and line your baking sheet with parchment paper.
  • Scoop the dough onto the prepared baking sheet about two inches apart.
  • Bake until the cookies are set and the edges are firm, about 10 minutes.
  • Allow cooling on the baking sheet before transferring to a wire rack.

Notes

Use room temperature ingredients for better mixing. Don’t overbake; cookies will firm up as they cool. Allow enough space for cookies to spread.
