Preparation

  • Preheat your oven to 350 degrees and prepare your cookie sheet by greasing it or lining it with parchment paper.
  • In a large mixing bowl, combine the peanut butter and sugar alternative until light and fluffy using a mixer or sturdy spoon.
  • Add in the egg and stir until fully combined and the mixture looks cohesive.
  • Using a cookie scoop, portion out the dough and roll into balls, placing them on the prepared baking sheet about two inches apart.
  • Press each dough ball down gently to about half of its original height and create a crisscross design on top using a fork.

Baking

  • Bake the cookies for 7 to 10 minutes until golden brown around the edges, with slightly soft centers.
  • Allow the cookies to sit on the cookie sheet for a few minutes before transferring them to a cooling rack to cool completely.

Notes

Use smooth and creamy peanut butter for the best texture. Let the cookies cool completely before storage to maintain texture. For variety, add a sprinkle of salt or mix in sugar-free chocolate chips.
