Ingredients
  

Chocolate Almond Crust

  • 1 cup almond flour
  • 3.5 tbsp cacao powder
  • 2 tbsp butter softened
  • 1 tbsp granulated sweetener sugar substitute
  • 0.5 tsp vanilla extract

Peanut Butter Mousse Filling

  • 1 cup creamy natural peanut butter
  • 16 oz cream cheese room temperature
  • 1 cup heavy whipping cream 35%
  • 1 tbsp vanilla extract
  • 0.75 cup powdered sweetener sugar substitute
  • 0.25 cup peanuts optional, for crunch
  • 2 tbsp sugar free chocolate chips optional

Instructions
 

  • In a bowl, combine almond flour, cacao powder, butter, sweetener, and vanilla extract. Mix into a soft, crumbly dough.
  • Press the crust mixture into a 9-inch pie plate, flattening the base and shaping the sides. Set aside.
  • In a large bowl, beat the cream cheese, peanut butter, sweetener, and vanilla extract until smooth and creamy.
  • Add heavy cream and beat again until the filling becomes light and fluffy.
  • If desired, fold in chopped peanuts and sugar free chocolate chips for added texture.
  • Spoon the peanut butter mousse over the prepared crust and smooth the top with a spatula.
  • Refrigerate for at least 3 hours, or until firm and sliceable.
  • Before serving, drizzle with melted sugar free chocolate or garnish with extra peanuts if desired.

Notes

Use natural peanut butter for best results. Chill thoroughly for clean slices, and taste your filling before chilling to adjust sweetness if needed.
