  • 1 1/4 cups all-purpose flour This forms the base for the pastry.

  • 1 tbsp salted butter, cut into 6 cubes For dotting on top.

Instructions
 

Preparation of the Dough

  • In a mixing bowl, combine the all-purpose flour, granulated sugar, and kosher salt. Stir together until well blended.
  • Add the cold, cubed salted butter to the flour mixture. Using a pastry cutter or fork, cut in the butter until the mixture resembles coarse crumbs.
  • Gradually add the ice-cold water to the mixture, one tablespoon at a time, mixing gently until the dough begins to come together. Gather it into a ball, wrap it in plastic wrap, and refrigerate for at least one hour.

Preparation of the Filling

  • In a separate bowl, combine the fresh blueberries and chopped strawberries. Sprinkle the 1/4 cup of granulated sugar, 2 tablespoons of all-purpose flour, lemon juice, and lemon zest over the fruit. Gently toss the mixture to coat the berries evenly.

Assembly and Baking

  • Preheat your oven to 425°F. Remove the dough from the refrigerator, and roll it out to about 1/8 inch thick, aiming for a rough circle of about 11-12 inches in diameter.
  • Transfer the rolled-out dough onto a baking sheet lined with parchment paper.
  • Spoon the berry mixture onto the center of the dough, leaving a 2-3 inch border. Fold the edges of the dough over the filling.
  • Dot the top of the filling with cubed salted butter. Whisk the egg and brush it over the exposed crust.
  • Sprinkle the coarse sugar over the crust. Bake for 25 to 30 minutes or until the crust is golden brown.

Final Steps

  • Allow to cool for a few minutes and slice into wedges for serving.
  • Serve warm or at room temperature, optionally with ice cream or whipped cream.

Notes

Ensure butter is icy cold for a flaky crust; remember to chill the dough. Watch for browning, as ovens vary in temperature.
