For the Frosting

Instructions
 

Preparation

  • Begin by preheating your oven to 350°F (175°C) and lightly grease your cake pans.
  • In a large mixing bowl, combine the gluten-free flour, cocoa powder, baking powder, baking soda, and kosher salt. Whisk these dry ingredients together.
  • In a separate bowl, mix the sugar, Greek yogurt, vegetable oil, espresso powder, brewed coffee, eggs, and vanilla.
  • Gradually add the dry ingredient mixture into the wet mixture and gently fold together using a rubber spatula until just combined.
  • Divide the batter evenly between the prepared cake pans and smooth the tops.

Baking

  • Bake in the preheated oven for about 30 to 35 minutes, or until a toothpick inserted in the center comes out clean.
  • Allow the cakes to cool in the pans for about 10 minutes before transferring them to a cooling rack to cool completely.

Frosting

  • In a large bowl, beat the room temperature butter until creamy.
  • Gradually add in the powdered sugar, mixing on low speed. Incorporate the vanilla extract and the milk.
  • Combine the unsweetened cocoa and espresso powder into the frosting, beating until smooth.

Assembly

  • Once the cakes are completely cooled, place one layer on your serving plate and spread a layer of frosting on top.
  • Top with the second cake layer and frost the top and sides generously.
  • Allow the frosted cake to set for about 30 minutes before slicing.

Notes

Ensure ingredients are at room temperature to improve texture, and avoid overmixing the batter. Variations include adding orange or peppermint extract, or chocolate chips.
