Ingredients
  

  • 2 1/2 cups all-purpose flour
  • 2 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 cup unsalted butter softened
  • 1 3/4 cups granulated sugar
  • 4 large eggs
  • 1 tbsp vanilla extract
  • 1 cup whole milk
  • food coloring pink, blue, purple, yellow for rainbow layers
  • 3 cups buttercream frosting store-bought or homemade
  • edible glitter, sprinkles, or gold sugar for decoration
  • fondant unicorn horn and ears optional

Instructions
 

  • Preheat oven to 350°F (175°C). Grease and line two 8-inch round cake pans.
  • In a bowl, whisk together flour, baking powder, and salt.
  • In another large bowl, beat butter and sugar until light and fluffy. Add eggs one at a time, then mix in vanilla extract.
  • Gradually add the dry ingredients, alternating with milk, until the batter is smooth.
  • Divide batter into four bowls and tint each with food coloring for rainbow layers.
  • Pour each color in alternating patterns into pans for a marbled effect, or bake separate layers if desired.
  • Bake for 25–30 minutes, or until a toothpick inserted in the center comes out clean. Cool completely.
  • Frost with buttercream, smoothing the sides and swirling pastel colors on top.
  • Decorate with edible glitter, sprinkles, and fondant unicorn features for a magical finish.
