For the Custard

  • 2-3 pieces Egg Yolks for richness
  • 3-4 tablespoons Sugar for sweetness
  • 2 tablespoons Plain Flour for thickening

  • 1 teaspoon Icing Sugar for dusting adds a touch of sweetness

Instructions

Preparation

  • Preheat your oven and lay out the thawed puff pastry sheet on a clean surface. Roll out if necessary.
  • Cut the puff pastry into squares or rectangles and transfer to a baking sheet lined with parchment paper, leaving space between each piece.

Making the Custard

  • In a mixing bowl, whisk together the egg yolks and sugar until pale and thick.
  • Add in the plain flour and mix until well combined and smooth.
  • Warm the milk in a saucepan until just before boiling.
  • Gradually pour the warmed milk into the egg mixture while whisking continuously.
  • Return the custard mixture to the saucepan over low heat, stirring continuously until thickened.
  • Remove from heat and add vanilla extract, stirring to combine.

Assembly and Baking

  • Spoon or pour the custard into the prepared puff pastry squares.
  • Bake until the puff pastry is golden brown, approximately 15 to 20 minutes.
  • Allow to cool slightly before dusting with icing sugar.
  • Serve as a delightful treat, optionally with fresh fruit.

Notes

Ensure puff pastry is fully thawed for best results. Whisk the egg yolks and sugar well to avoid lumps. Monitor baking time closely to prevent burning.
