White Chocolate Mousse Tartlets

Ingredients
  

For the Tart Shell

  • 350 g 350 g flour Gives structure to the crust.

  • 1 large 1 egg yolk Enriches the dough.

For the Mousse

  • 80 g 80 g white chocolate The base flavor of the mousse.
  • 2 large 2 egg yolks Add richness and creaminess.
  • 2 tablespoons 2 tablespoons sugar Sweetens the mousse.
  • 1 cup 1 cup cream Provides a light, airy texture.
  • 1/4 tsp 1/4 tsp cayenne pepper Adds a subtle warmth.
  • 1/4 tsp 1/4 tsp cinnamon Offers a gentle spice.

Instructions
 

Prepare the Tart Shell

  • In a large mixing bowl, combine the flour, butter, 125 grams of sugar, and a pinch of salt. Rub the butter into the flour until the mixture resembles coarse crumbs.
  • Add the eggs and the additional egg yolk to the flour mixture. Gently mix until the dough comes together. Wrap the dough in plastic wrap and refrigerate for about 30 minutes.

Prepare the Mousse

  • In a small saucepan, combine the egg yolks and two tablespoons of sugar over low heat, whisking gently until the sugar dissolves and the mixture is smooth.
  • Add the white chocolate to the egg mixture and stir until melted. Set aside to cool slightly.
  • In a separate bowl, whip the cream until it forms soft peaks. Gently fold the whipped cream into the cooled white chocolate mixture.

Bake the Tart Shells

  • Preheat your oven to a moderate temperature. Roll out the chilled dough to about 1/8 inch thick.
  • Line tartlet pans with the rolled-out dough, trim excess, and poke the bottom with a fork.
  • Bake in the preheated oven until lightly golden. Let cool.

Assemble and Chill

  • Fill the cooled tartlet crusts with the prepared white chocolate mousse. Spread evenly.
  • Refrigerate for at least a couple of hours to allow the mousse to set completely.

Serve

  • Dust with cocoa powder or cinnamon if desired. Serve cold and enjoy.

Notes

Tip: Chill the dough properly and avoid overmixing the mousse for best results. Store leftovers in the refrigerator.
