Making the Cream and Syrup

  • Begin by bringing 1 cup of heavy cream to a gentle simmer in a medium saucepan.
  • Remove the saucepan from heat, add the chopped white chocolate, and whisk until smooth and glossy.
  • Let the mixture cool to barely lukewarm for about 10 minutes.
  • In a large bowl, beat 2.5 cups of chilled cream and 0.5 teaspoons of almond extract until soft peaks form.
  • Gently fold in the cooled white chocolate mixture until no streaks remain.
  • For the syrup, stir together the sugar and 0.5 cups of water in a small saucepan over medium heat until sugar dissolves.
  • Incorporate 0.75 teaspoons of almond extract into the syrup and remove from heat.

Layering the Trifle

  • Submerge one biscuit in the warm syrup and place it at the bottom of a 14-cup trifle dish.
  • Spread 1/3 of the melted raspberry jam over the biscuits.
  • Add 1/3 of the partially thawed raspberries with any released juices.
  • Follow with 1/3 of the whipped chocolate cream.
  • Repeat the layering process two more times with biscuits, jam, raspberries, and whipped cream.

Final Touch

  • Top with fresh raspberries and sprinkle toasted almonds around the edges.
  • Cover and refrigerate for at least 5 hours or up to 24 hours.

Notes

Ensure the cream is chilled before whipping for the best volume. Allowing the trifle to chill longer enhances the flavor. Adjust the sugar in the whipped cream to taste.
