  • 1 teaspoon vanilla extract adds depth
  • cups gluten-free all purpose flour for structure and texture
  • ¾ teaspoon baking powder leavening agent
  • ¾ teaspoon baking soda provides lift
  • ½ teaspoon salt balances flavor
  • ¾ cup sour cream or dairy-free sour cream adds moisture and richness
  • 1-2 tablespoons powdered or confectioners sugar for topping finishing touch

Instructions
 

Preparation

  • In a mixing bowl, combine the melted butter, brown sugar, white sugar, cinnamon, salt, and gluten-free flour for the crumb topping. Stir until crumbly and set aside.
  • In another bowl, cream together the room temperature butter and white sugar until light and fluffy using a whisk or rubber spatula.
  • Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract until combined.
  • In a separate bowl, whisk together the gluten-free flour, baking powder, baking soda, and salt.
  • Gradually add the dry ingredients to the butter and sugar mixture, alternating with sour cream, starting and ending with flour. Mix just until combined.

Baking

  • Pour half of the batter into a greased 9x13 inch baking pan, spreading it evenly.
  • Sprinkle the crumb topping evenly over the batter layer.
  • Pour the remaining batter on top of the crumb topping, gently spreading it to cover.
  • Bake the cake until golden brown and a toothpick inserted into the center comes out clean.

Notes

Make sure the butter is at room temperature for better creaming. Measure gluten-free flour accurately for the right texture. Allow the cake to cool completely before slicing.
