  • 1/2 tsp salt balances sweetness

Wet Ingredients

  • 1 cup granulated sugar adds sweetness and moisture
  • 1/2 cup unsalted butter, melted enhances richness
  • 2 large eggs binds the ingredients
  • 1 tsp vanilla extract imparts flavor
  • 1 can (20 oz) crushed pineapple, well-drained adds moisture and flavor

Instructions

Preparation

  • Preheat your oven to 350°F (175°C) to ensure even cooking.
  • In a mixing bowl, whisk together the flour, baking powder, baking soda, and salt.
  • In another bowl, mix together the melted butter and granulated sugar until smooth.
  • Add the eggs and vanilla extract to the butter-sugar mixture and whisk until smooth.
  • Gradually incorporate the flour mixture into the wet ingredients, stirring gently until just combined.
  • Fold in the well-drained crushed pineapple until evenly distributed.
  • Pour the batter into a greased 9x13 inch baking pan and spread evenly.

Baking

  • Bake in the preheated oven for about 30 minutes, or until golden brown.
  • Check for doneness by inserting a toothpick into the center, which should come out clean.
  • Remove from the oven and allow to cool in the pan.
  • Once cool, cut into bars and serve.

Notes

These bars are great for breakfast, snacks, and gatherings. Ensure proper drainage of the pineapple to avoid excess moisture.
