Preparation

  • Preheat your oven to 350°F and prepare your baking sheets by lining them with parchment paper.
  • In a bowl, mix together the flour, baking soda, and salt until evenly combined.
  • In a separate bowl, beat the softened butter and granulated sugar until light and creamy.
  • Add the egg, lime zest, lime juice, and vanilla extract to the butter and sugar mixture and blend until combined.
  • Gradually incorporate the dry ingredients into the wet mixture, mixing slowly to avoid overworking the dough.
  • Form small dough balls and roll them in granulated sugar.
  • Place the sugar-coated dough balls on the prepared baking sheets, spaced two to three inches apart.

Baking

  • Bake the cookies in the preheated oven until the edges are slightly golden, about 10 minutes.
  • Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a cooling rack.
  • Let the cookies cool completely on the rack before storing or serving.

Notes

For best results, ensure butter is softened, measure flour correctly, and allow cookies to cool properly.
